The fast freezing tunnel drying machine integrates the steps of freezing and drying and refines both at the same tie throughout a single machine. A modular approach is used in the design of the machine by employing tunnel metrology that allows a continuous passage of the goods through various zones or sections beginning with ultra rapid freezing. In this phase, the fresh, nutritious, and flavorful nature of the product is preserved, and large ice crystals which tend to cause structural problems are not formed. The frozen products then proceed to the drying zone where controlled sublimation or evaporation at measured pressure and temperature removes moisture. Besides fruits, vegetables, and meat, other materials and industrial products can also be processed.
